INGREDIENTS

3/4 cup sweetened oat milk

1/3 cup Mr Organic Agave syrup

1/4 cup vegan plain yoghurt

2 tbsp Mr Organic Organic Sicilian Lemon Juice

Zest of one large lemon

1 tsp vanilla extract

1 1/4 cups plain flour

1 tsp baking powder

1/2 tsp baking soda

Pinch sea salt

1 tbsp Mr Organic coconut oil

Toppings:

Whipped coconut cream

Mr Organic Organic Lime Juice

Mr Organic Organic Digestive Biscuits with Chocolate Chips

Mr Organic Organic Ginger & Lemon Biscuits

Lemon and lime zest

METHOD

Add the milk, maple syrup, yoghurt, lemon juice & zest, and vanilla extract into a bowl together and whisk until smooth. Set aside.
Place the plain flour, baking powder, baking soda and salt in a separate bowl and whisk together until well combined. Make a well in the centre, then pour in the wet mixture then whisk again to combine until a smooth pancake batter forms.
Heat the coconut oil in a pancake pan on a medium heat, then ladle in the pancake mixture 1/4 cup at a time, smoothing it out into a circular shape.
Cook the pancakes, one at a time, for 3-4 minutes on one side and when the edges lift with a spatula, flip them over to cook on the other side.
Repeat the process until all of the pancake batter is used, it should make 8 pancakes in total.
Add a splash of Mr Organic’s Lime Juice into whipped coconut cream and serve on top of the pancakes with biscuit crumb and citrus zest.
