INGREDIENTS

1/2 Leek (use a whole one if it's small)
2 Spring Onions
1/2 Red Pepper
1 Aubergine
1 Red Chilli
2 Cloves of Garlic
10 Leaves Wild Garlic- chopped and added at the end of the cooking process. If you don't have any wild Garlic crush 1 clove of normal Garlic
1 Tablespoon Tomato Paste Mr
1 Heaped Spoon of Oregano
10-15 Basil Leaves
Salt & Pepper to taste

METHOD

1. In a pan, add some sunflower oil and the equivalent amount of water and cook the leeks & spring onions

2. Add chopped garlic cloves and chili, cook for another few minutes

3. Add aubergine and cook until it’s almost ready

4. Add the rest of the ingredients and cook until water is evaporated and sauce is nice & thick

6. Add a large spoon of Mr Organic aubergine add-in sauce

5. Garnish with chopped cherry tomatoes & fresh basil
