Bean Burrito and Loaded Nachos with a Hemp Caesar Dressing

INGREDIENTS

1 Sweet Potato Wrap
1/4 Tomato Quinoa
1 Avocado - mashed with juice 1/2 Lime
Coriander
Tortilla Chip
Mr Organic Ginger and Chilli Hot Salsa
Nutritional Yeast
FOR THE HEMP CAESAR DRESSING:
1 1/2 cup Hemp Seeds
1 cup unsweetened Brown Rice Milk
juice 1/2 Lemon
3 Cloves Garlic

METHOD

1. For the hemp Caesar dressing, add all the ingredients to a blender and blend until smooth. Store in the fridge for up to a week.

2. For the burrito, warm the wrap and place on strip of baking paper. Add 1/4 tomato quinoa), 1/2 can mixed beans, 1/2 avocado, hemp Caesar dressing and coriander. Wrap tightly.

3. For the nachos, a handful of tortilla chips, add on some salsa, 1/2 can mixed beans, 1/2 avocado, sprinkle on some nutritional yeast and add on chopped coriander.

4. Add to your lunchbox to take to school or work, or enjoy on a plate straight away.
