Black Rice Salad with Hemp Vinaigrette

Summer has come with this tasty black rice recipe! Our black rice is not only tasty as a hot dish – this recipe proofs it’s an all-round talent: its crunchy texture & nutty flavour is perfect enjoyed as a cold salad for warm days!

INGREDIENTS

2 cans of Sweetcorn
1 Asparagus, diced
1 Red Pepper, diced
Chopped Parsley for garnish
1 tablespoons Agave Nectar
1 tablespoons Ground Cumin
1/2 cup of Mr Organic Cold Pressed Hempseed Oil
Salt and Pepper

METHOD

1. Cook the black rice in water on a low heat with a sprinkle of salt and olive oil (ratio of rice to water is 2:1).

2. Cover the red pepper in salt and pepper and place it in the oven at 120 degrees until soft.

3. Whilst red pepper is cooking, prepare the asparagus in hot water until tender. Place it in an ice bath for a couple minutes, then drain.

4. Dice the roasted pepper and add into mixing bowl along with the sweetcorn, asparagus and fennel.

5. Add the Mr Organic Apple Cider Vinegar, agave & cumin to a blender, then slowly add the Mr Organic Hemp Oil, so the mixture emulsifies.

6. Mix the vegetables, rice and vinaigrette, garnish with some parsley, salt and pepper and it’s ready to eat!
