Chickpea Falafels

Check out these easy and healthy chickpea falafels made by Miriam from @mimisbowl. These falafels are crispy on the outside, and perfectly soft in the middle. Miriam explains the how simple this recipe is: “I add some extra spices and flavourings for zing, but really the basic recipe is 4 ingredients, all of which are probably in your kitchen already. I serve with warm pitta pockets and salad. Then everyone can fill their own falafel pockets and tuck in.”

1 onion, finely diced
1 garlic clove
1-2 Tbsp. flour
1-2 Tbsp. flour
Optional spices: 1 tsp. ground cumin, 1 tsp. ground coriander, 1 tsp. parsley, chopped, 1 tsp. chives, chopped


1. Preheat the oven to 180C (fan).

2. Gently fry the onion in 2 tbsp. of olive oil, until soft (5-8 mins), add the crushed garlic and cook for a further 1-2 mins; then set aside to cool.

3. In a blender blitz the chickpeas, onion and garlic mix. Pulse until you reach the desired texture.

4. Pour the blitzed ingredients into a bowl and combine with the flour, spices and herbs.

5. Shape the falafels into small patties. If the mix feels too wet, add a 1-2 tablespoons of plain flour. Put the falafels on a plate and set aside.

6. Take a large frying pan, add 1 tablespoon of oil and fry the falafels in batches, for 1-2 minutes on each side, until golden.

7. Transfer the tray of falafels to the oven and bake for approximately 5-10 minutes, until they are cooked thoroughly.

8. Serve with warm pitta bread, a quick vegan yogurt dip and some fresh lettuce. Yum!
