Cranberry Coconut Granola

Start your day off with this nutritious cranberry coconut granola! Lucy, from @puredelicious_, shares her recipe for this granola which is perfect for breakfast or even eating as a snack. Eat it with some plant-based milk, vegan yoghurt or place on top of a smoothie bowl with some Mr Organic Chocolate Spread!

INGREDIENTS

180g jumbo oats
85g almond butter
60ml maple or agave syrup
50g dried cranberries
40g coconut flakes
50g almonds
Pinch of salt

METHOD

1. Preheat the oven to 170C.

2. Combine the almond butter and syrup in a large bowl until well incorporated.

3. Add in the oats, cranberries, coconut flakes, almonds, and salt. Mix until everything is coated.

4. Place in the oven for 20-25 minutes. Flip the granola halfway through and bake until golden and crispy.

5. Allow to cool, and enjoy with vegan yoghurt, plant-based milk or a smoothie.
