Italian Pasta Salad

Another inspiration for our brand new legume rices! This time we use them as a pasta substitute to this delicious Italian pasta salad recipe.

Easy to make and love, we can guarantee you this will be one your favourites!

INGREDIENTS

80 g black olives - sliced
1 yellow bell pepper, seeded and diced
3 large tomatoes, cubed
1 tsp dried oregano
1 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp maple syrup
1/2 tsp dried parsley
1/2 tsp black pepper
1/2 tsp dried basil

METHOD

1. Cook the chickpea rice according to the packaging.

2. Add the chopped olives, yellow bell pepper and tomatoes to the cooked rice.

3. Mix the olive oil, apple cider vinegar and the herbs – this is the dressing.

4. Ad the dressing to the bowl and enjoy!.
