Luxurious Chocolate Fondant

Dig into this gooey, sumptuous and indulgent vegan fondant for an extra special holiday treat! Made using our chocolate and hazelnut spread, there’s so much to love about this tasty pudding! Top tip – add vegan ice cream and enjoy!

INGREDIENTS

30g of cocao powder
110g of plain flour
1/2 tsp of bicarbonate of soda
1/2 tsp of salt
90g of dark brown sugar
100ml soy milk
1 tsp apple cider vinegar
2 tsp ground flaxseeds
1 tsp cinnamon
100ml plant milk

METHOD

1. Create the chocolate filling in advance by melting the chocolate spread with the milk in a double broiler over low heat. Stir to combine and once the chocolate spread and milk are well combined, transfer the mixture into an ice cube tray and place it in the freezer for a minimum of 2 hours or until set.

2. Preheat your oven to 180C and grease 4 pudding moulds. Dust the inside with a thin layer of cocoa powder.

3.Sift the flour, remaining cocoa powder, baking soda and salt into a large bowl and mix in the brown sugar. In a separate jug, combine the milk, warm water, apple cider vinegar, flaxseeds, sunflower oil and cinnamon.

4. Gently mix together the wet and dry ingredients with a whisk until well combined. Add 2 tablespoons of the mixture into each pudding mould, then remove your chocolate cubes from the ice cube tray and place 1 cube into the centre of each pudding mould. Fill halfway with the remaining batter and gently tap the mould on your work surface to remove any air bubbles.

5. Place the mould into your preheated oven and bake in the middle of the oven for 14 minutes – do not open the oven door during the time to maintain the heat.

6. Remove immediately once the baking time elapses, gently loosen the puddings with a knife and flip them onto your serving plates. Serve immediately and enjoy!
