Marvellous Moist Vegan Chocolate Cake

INGREDIENTS

2 cups Self-Raising Flour
1 and 1/2 cups unrefined Caster Sugar
3/4 cup unsweetened 100% Cacao (or unsweetened Cocoa Powder)
2 teaspoons Baking Powder
1 teaspoon Bicarbonate of Soda
1/2 teaspoon Salt, 1 cup Oat Milk or Almond or Coconut Milk
140g Apple Puree
1 teaspoons Vanilla Extract,
1 cup Boiling Water

METHOD

1.Pre-heat Oven to 180 degrees C / 350 F / Gas Mark 4 / Aga Baking Oven

2.Add sugar, baking powder, bicarbonate of soda and salt. Stir together until you have an even colour amongst the dry ingredients.

3.Add the oat milk, vegetable oil, vanilla extract and apple puree. Whisk together well.

4.Add boiling water and whisk. The consistency will be very loose; runny like a thick chocolate soup!

5.Pour into 2 x greased 9″ cake pans and bake in oven for 25 minutes or until a metal skewer comes out clean from the centre of the cake.

6.Allow to cool then add a lavish layer of Mr Organic Dairy Free Chocolate and Hazelnut Spread to sandwich your cake layers together. Delicious and dairy free!
