Pea and Bean Mint Patties

These patties are quick and easy to make and are a great way of sneaking some protein into your diet. This can also be used on a veggie burger… always a winner for those who are not plant-based to show them how tasty it can be to substitute the meat.

INGREDIENTS

2 cups of Peas either frozen ones that have been thawed or fresh
1/2 cup of Chia Seeds covered in Water and left to soak ( These act as a binder to replace Eggs)
2 Spring Onions chopped
1 handful of Mint (or more depending on taste!)
half a teaspoon of good quality Salt, Coconut Oil to cook

METHOD

1.Put all the ingredients in a food processor or blender and mix together.

2.Heat the coconut oil in a frying pan until hot, take a ball of the mint patty mixture and squash it on the pan with a spatula to make into a patty mix. Cook for about 3 minutes on both sides.

3.Serve while warm or they keep well in the fridge for leftovers the next day!
