Peanut Curry

There is nothing more comforting than a bowl of freshly made, steaming curry.
Using smooth peanut butter as the main ingredient of the sauce just makes the whole dish more rich and creamy.

 

Such a perfect treat for a busy weekday dinner.

INGREDIENTS

1 onion chopped
2 cloves of garlic, minced
1 cm fresh ginger, peeled and finely chopped
Your favourite veggies - for this recipe we used a handful of green beans and 1/2 sweet potato, all chopped for bite size chunks
2 tbsp smooth peanut butter
1 tbsp soy sauce
1/2 tin of coconut milk
Fresh coriander to serve

METHOD

1. Heat the oil in a large pan. Cook the onion till translucent

2. Add the garlic, ginger, veggies and chickpeas. Season with salt and pepper and cook for 10 mins.

3. Add the sauce ingredients and stir until smooth. Cook for a further 20 mins.

4. Serve with the rice and fresh coriander.
