Quick & Nourishing Italian Style Soup

Francesca from @healthymumway created this flavoursome, super simple vegetable soup. Just what you want on a gloomy day, when you need some help to keep you going and doesn’t require a lot of fuss.

INGREDIENTS

4 big potatoes, chopped in to small cubes
6 cherry tomatoes
2 garlic cloves, minced
fresh or dry parsley
ground or fresh ginger
turmeric
paprika
rosemary
400ml water
1/2 vegetable stock cube
Himalayan salt

METHOD

1. Start by cutting the potatoes in small pieces and transfer in a pan with some extra virgin olive oil, chopped cherry tomatoes & minced (or chopped) garlic.

2. Fry for about 5 minutes until the garlic and chopped tomatoes get soft. Now add the water and all other herbs and spices. Cover with a lid and let cook for about 20/25 minutes or until the potatoes are soft.

3. In the meantime in another saucepan bring the water to boil and cook Mr Organic chickpea rice in it.

4.Once cooked remove the water and add it into the Italian potato broth and it’s ready to eat!
