These beautiful stuffed courgettes are filled with quinoa and our aubergine add-in sauce. Sounds like a great combo if you ask us!

1. In a baking tray place the courgettes, drizzle with some oil of your choice and put under the grill for 10-15 mins till they become slightly softer and browned on the edges.
2. Meanwhile, in a shallow pan cook the chopped mushrooms with finely chopped garlic using preferred oil.
3. Once it’s cooked and slightly browned, add it to the cooked quinoa and add the chopped pepper and spices.
4. Take the courgettes out of the oven and add the filling with a generous serving of the aubergine add-in sauce- spread it well.
5. Then add the filling and sprinkle with fresh parsley. There you have it! Enjoy 🙂
