Who knew that you could make both delicious and healthy savoury pancakes from lentils?! And they are gluten free!

1. Prepare the Lentil Mix as per instruction on packaging.
2. Transfer the cooked and drained Lentil Mix to a medium size bowl. Remove the pit of the avocado and mash the avocado onto the Lentil Mix.
3. Add the dried herbs and juice of the lemon, then mash everything together in the bowl. You can of course also use a food processor for this step. Add the flour and mix well, then set aside for 15 minutes.
4. In a medium size pan, heat a little oil to fry the pancakes. With wet hands form little balls with the dough, then press them into the hot pan with a ladle to form the pancakes. Repeat until the entire batter is used up and flip the pancaked after 5 minutes until evenly brown on both sides.
Enjoy with a sprinkle of salt, some watercress and a dollop of coconut yogurt – delicious!
