This recipe is so easily made and full of yummy-ness – using our Seitan Ragu Sauce.

1. Preheat the oven 200 C fan / 180 gas. Dice courgettes & sweet potato into bite size chunks. Place them on a baking tray. Add olive oil and salt. Put them in the oven for 15 mins.
2. In the mean time, heat the other 1/2 of olive oil in a sauce pan for two minutes, when the oil is hot add the quinoa. Place the lid on the sauce pan, hold it tight and shake the pot for 2 minutes or until the quinoa is toasted.
3. Take baking tray out of the oven, add seitan, cottage cheese/creme fresh, sprinkle panko and grated parmesan cheese and put back in the oven for another 5 minutes or until golden
4. Take the tray out of the oven and serve in bowls.
