Simple Vegetable Curry

This delicious and fragrant vegetable curry is made by Lucy from @puredelicious_. Filled with plenty of nutritious vegetables, this curry is healthy and makes it even easier to get your daily five a day. Super simple and easy to make, perfect for batch cooking.

INGREDIENTS

1 white onion, diced
2 garlic cloves, minced
1 Tbsp. cumin
1 Tbsp. paprika
1-2 tsp. chilli flakes
1 small courgette
100g mushrooms
1 large carrot
1-2 bell peppers
1 tin coconut milk (optional)
Salt and pepper, to taste

METHOD

1. Sauté the onion in olive oil in a pan until soft.

2. Add the garlic, cumin, paprika and chilli flakes. Fry for a few minutes until fragrant.

3. Chop the courgette, mushrooms, carrot and peppers into bite-sized pieces and add to the pan. Mix in the chopped tomatoes, fill half of the tomato tin with water, and add it to the pan.

4. Bring the curry to a boil, then reduce to simmer.

5. Add the chickpeas and coconut milk. Simmer for 30 minutes, until the vegetables are thoroughly cooked and the curry has reached your desired consistency.

6. Season with salt and pepper, then serve with rice or naan.
