1. Cook the pasta according to the packaging, reserve around 2 Tbsp of the pasta cooking water.
2. While the pasta is cooking make the sauce: cook the leek on a little bit of oil. Add the coconut sugar to caramelise it a little bit.
3. Add 10pcs of sun-dried tomatoes and one tablespoon of the sun-dried tomato oil. Sprinkle all the spices and herbs, cook together for about 6/8 minutes.
4. Add the cook pasta and the reserved pasta water and mix everything together. If you would like use fresh parsley for serving..
