Speedy Leek & Sundried Tomato Pasta by Em from myredcarpetbody

The lovely Em, who is behind the fabulous Instagram account of myredcarpetbody, created this easy, speedy, yummy leek and sun-dried tomato pasta recipe. When you’re short on time, this dish offers a quick, easy and delicious Italian inspired meal ready in no time.

INGREDIENTS

Reserve around 2 Tbsp pasta water
1 leek finely chopped
A splash of Mr Organic Extra Virgin Olive Oil
1/4 tsp of coconut sugar
1 jar of Mr Organic Sundried Tomato Antipasti
1/2 tsp salt
1/2 tsp chilli flakes
1/2 tsp black peppers
1 tsp dried oregano
1 tsp dried basil
Handful walnuts
1 Tbsp hemp seeds

METHOD

1. Cook the pasta according to the packaging, reserve around 2 Tbsp of the pasta cooking water.

2. While the pasta is cooking make the sauce: cook the leek on a little bit of oil. Add the coconut sugar to caramelise it a little bit.

3. Add 10pcs of sun-dried tomatoes and one tablespoon of the sun-dried tomato oil. Sprinkle all the spices and herbs, cook together for about 6/8 minutes.

4. Add the cook pasta and the reserved pasta water and mix everything together. If you would like use fresh parsley for serving..

1 tsp dried oregano, 1 tsp dried basil, Handful walnuts, 1 Tbsp hemp seeds
