Another wonderful Mexican inspired recipe by the amazing Niki! Whether you’re eating this as a side dish with your main meal or as a dip with tortilla chips for your Cinco de Mayo party, this recipe is bound to be a crowd-pleaser.

INGREDIENTS

500ml Vegetable stock
1 Yellow Pepper
Juice of 1 Lime
Couple of Radishes
Chopped Coriander
Salt & Pepper to taste

METHOD

1. Dice the yellow pepper.

2. Finely slice radishes.

3. Leave some yellow pepper and radish to one side for the garnish.

4. Add all ingredients into a pan and cook for 20 minutes until beans are tender.

5. Season with salt & pepper.

6. Garnish with coriander, yellow pepper and radish.
