Tomato and Basil Salad with Pesto Dressing

Enjoy this fresh and tasty Italian tomato and basil salad that is super easy to throw together. It is the perfect summer dish to accompany a fun barbecue with friends and family, or even to take on a picnic on a warm day!

INGREDIENTS

300g large tomatoes roughly chopped

2 handfuls of fresh basil leaves

1 small red onion finely diced

Pesto Dressing

1 Tbsp. Mr Organic Basil Pesto

1/2 lemon juiced

1 Tbsp. Mr Organic Olive Oil

1/4 tsp. black pepper

Mr Organic Apple Cider Vinegar

Sea salt, to taste

METHOD

1. Wash and roughly chop your tomatoes, removing the majority of their seeds. Finely dice the red onion and place them into a large salad bowl together with the tomatoes and fresh basil.

2. In a small jug whip up the pesto dressing. Place the pesto, lemon juice, olive oil, pepper and apple cider vinegar and mix until combined. Season to preferred taste with sea salt.

3. Pour the pesto dressing onto your tomato salad and enjoy right away, or keep in the fridge overnight.
