1. In a large bowl, mix the tomatoes, garlic and basil. add balsamic vinegar and extra virgin olive oil. add sea salt and black pepper to taste, mix until combined. cover and set aside in the fridge for at least an hour.
2. Slice the baguette diagonally into thick slices. drizzle both sides lightly with olive oil and toast in the oven until golden brown.
3. Spoon the mixture onto warm slices of bread & serve immediately.
