Vegan Sausage Rolls

Why not swap out the traditional sausage roll for these vegan sausage rolls in light of celebrating global meat free day? Packed with herbs and spices, these tofu based sausage rolls are super flavoursome and extra juicy!

INGREDIENTS

400g firm Tofu (not silken)
2 large Garlic Cloves
1/2 tsp Cumin
1/2 tsp Ground Corriander
1/2 tsp Smoked Paprika
1/2 tsp dried Thyme
1/2 tsp Cayenne Pepper
1/2 tsp Salt to taste
Black Pepper to taste
4 tsp nutritional Yeast
1/2 cup Flour
1 sheet vegan Puff Pastry
2 tbsp Soy Sauce
2 tbsp Almond Milk

METHOD

1. Preheat oven to 180°C.

2. Place the whole block inside a large mixing bowl and mash into crumble using fork or masher.

3. Finely chop garlic cloves and add to tofu.

4. Place all herbs and spices into bowl and mix thoroughly.

5. Add nutritional yeast and soy sauce.

6. Whilst mixing, slowly add the flour so the mixture thickens. Add more/less flour if necessary.

7. Once mixture is a nice thick consistency, add a suitable amount of filling onto puff pastry.

8. Roll the puff pastry and slice roughly 3 cm in length, perfect bite size!

9. Continue until puff pastry and filling is finished!

10. Place the sliced sausage rolls onto a baking tray with baking paper.

11. Brush almond milk on the top of each sausage roll.

12. Place in the oven for 25 minutes and your party pleasing sausage rolls are done!
