Very Autumnal Veggie Roast

All this recipe requires is some oil, salt and spices to turn these vegetables into a sublime treat. Dunk into our organic Italian tomato ketchup or grilled-pepper add in for a truly delicious treat.

INGREDIENTS

Courgette
Aubergine
Carrots
Sweet Potato
Potatoes
Salt
Chipotle fora spicy kick or dried Rosemary for a less spicy but more flavoursome taste

METHOD

1. Cut the aubergine into round slices and courgette into strips.

2. Roast on the top shelf at 200C without any oil or spices. When nice and brown take from the oven and drizzle a bit of olive oil and sprinkle with freshly grounded black pepper.

3. Cut carrots, sweet potatoes and potatoes into chunks (keep in mind that bigger chunks are taking less time to cut but more time to cook).

4. Drizzle over a bit of olive oil, salt and chipotle or dried rosemary if you want it less spicy but more flavour.

5. Roast at 180C until soft and then another 5-10 min on the top shelf of the oven at 200C.

Serve with Mr Organic roasted peppers dip and Mr Organic ketchup.
