Pineapple Mint Shrub Cocktail

This cocktail is perfectly pungent and packed with nutrition. Relish in the tropical medley of pineapple, ginger, mint and apple cider vinegar when you make this as a detoxing mocktail or as a zesty party drink.

This recipe is simple to put together however, it has a lengthy prep time, so it’s best to prepare it a day in advanced before serving. It can be made alcoholic or non alcoholic and uses our apple cider vinegars.

INGREDIENTS

1 pound Fresh Pineapple Chunks About 2 heaping cups
2 cups Sugar
2 tablespoons finely diced Fresh Ginger Optional
1 cup roughly chopped Fresh Mint About 1 ounce
Turmeric and Ginger
Soda Water
Light Rum or Gin (Optional)

METHOD

1. Mix the pineapple chunks, sugar and fresh ginger. Put in a container with a lid and refrigerate overnight, or at least 2 hours.

2. Macerate the fresh mint. (Rub it so with your hands or with a wooden spoon, in order to release the minty aroma.) Add it to the pineapple, sugar, and (optional) ginger mixture.

3. Add the apple cider vinegar, stir and refrigerate.

4. When ready to serve, (straight or on the rocks, i.e. with ice cubes) strain out the fresh mint and add soda water/sparkling water to taste, plus if desired, light rum or gin.
