Porcini Tortellini with a creamy Sun-dried Tomato Sauce

The perfect quick, easy and always delicious meal to get you through the Autumnal chill and darker nights. Enjoy this fully vegan, creamy tomato pasta sauce recipe.

INGREDIENTS

1 large yellow onion finely chopped
2 cloves of garlic minced
250ml of Dairy Free cream
salt and pepper to taste
Fresh herbs to garnish

METHOD

1.Prepare your tortellini according to the packaging instructions.

2. In a large pan heat the oil and fry the chopped onion for 2 minutes. Add in the minced garlic.

3. Roughly chop up the sundried tomatoes and add them to the pan. Stir through the tomato puree, then reduce the heat to low and pour in the cream.

4. Bring to a simmer for 5 minutes, then season with salt and pepper, add in the tortellini and stir to combine.

5. Serve hot and garnish with fresh herbs.
