1. In a large saucepan combine the Ossa Vegan Broth with 250g of the Mr Organic Ancient Grain Mix. Bring to a boil, then simmer with the lid for 30-35 minutes. .
2. In the meantime add the diced carrots and celery to a non-stick frying pan with a little oil and cook them until soft. Prepare the potato mash by combining the mashed potatoes with 1 Tbsp olive oil, nutritional yeast and salt & pepper to taste.
3. Add the carrots and celery to the cooked Ancient Grain Mix and transfer everything to a large, ovenproof dish. Cover the mixture evenly with the potato mash, brush with a little oil and place it in the oven at 200C for 15-20 minutes or until golden. . .
4. Serve with fresh parsley & enjoy!
